Ingredients
Blackened Chicken
4 large chicken breasts (12 ounces raw each)
2 teaspoons blackening seasoning
1 teaspoon salt
Pineapple Salsa
1 1/2 cup diced fresh pineapples
1/2 cup diced red bell pepper
1/2 cup diced red onion
1/4 cup chopped fresh cilantro
Juice of 1 lime, about 2 tablespoons
Pinch salt
Instructions
Preheat your grill to medium-high heat.
Season your chicken breasts with the blackening seasoning and salt on each side.
Spray your grill with cooking spray, and throw the chicken on the grill. For large breasts, cook for about 10 minutes per side.
While chicken is cooking, prepare your salsa with chopping all the ingredients.
Add all salsa ingredients to a bowl and mix to combine. Season with salt to taste.
Allow chicken to rest for 5 minutes, and top with pineapple salsa. Enjoy!
