Baked Greek Chicken

Ingredients
2 pounds of the raw chicken breast (4 breasts β each should be 7-8 ounces as chicken loses weight as it cooks!)
1 teaspoon Greek seasoning
1 large tomato (150 grams) cut into 8 wedges
Juice of 1 lemon, plus additional slices to garnish if desired
2 teaspoons minced garlic
8 kalamata olives, cut into chunks
1 ounce crumbled feta cheese
Instructions
Preheat your oven to 350 degrees F.
Heat a large skillet pan to medium-high. Season your chicken breasts with Greek seasoning on each side as the pan warms up.
Spray the pan with cooking spray, and cook chicken for 3-4 minutes per side, just until golden brown, not fully cooked.
Remove chicken from the heat, and add all remaining ingredients besides the cheese.
Place in the oven and cook for 15 minutes.
Remove chicken from the oven, and sprinkle with feta cheese.
Turn the oven to broil, and place it back into the oven for 5 minutes.
Remove from oven, serve with rice, pasta, cauliflower rice, etc., and enjoy your baked greek chicken!
